A few of the most popular noodles that usually grace the table are the <a href=\"https:\/\/www.kawalingpinoy.com\/pancit-bihon-guisado\/\">Pancit Bihon<\/a>, <a href=\"https:\/\/www.kawalingpinoy.com\/pancit-palabok\/\">Pancit Canton<\/a>, and <a href=\"https:\/\/www.kawalingpinoy.com\/pancit-palabok\/\">Pancit Palabok<\/a>. But have you heard of Miki Bihon?<\/span><\/p>\n\n\n\n<p><b>Miki Bihon<\/b><span style=\"font-weight: 400;\">\u00a0is a Filipino stir-fried noodle dish that combines egg noodles (Miki) and rice noodles (bihon). Like most pancit guisado recipes, it's packed with an assortment of meats and vegetables for a delicious and filling dish that you can enjoy at any time of day!<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredient-notes\"><b>Ingredient<\/b> notes<\/h2>\n\n\n\n<p>There are no fast rules on what ingredients to use. You can prepare it with whatever meat, seafood, and vegetables you have on hand.<\/p>\n\n\n\n<ul class=\"wp-block-list is-layout-flow wp-block-list-is-layout-flow\">\n<li><b>Miki<\/b>- a type of <span style=\"font-weight: 400;\">egg noodle that is soft and pale yellow in color. It comes in <\/span><span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\">a dry variety,\u00a0which has a longer shelf life,\u00a0or a fresh variety<\/span><span style=\"font-weight: 400;\">, which needs to be refrigerated<\/span>.<\/li>\n\n\n\n<li><b>Bihon-&nbsp;<\/b><span style=\"font-weight: 400;\">dry, thin noodles made of cornstarch or rice flour.  It can be stored indefinitely outside of refrigeration.<\/span><\/li>\n\n\n\n<li><b>Chicken<\/b><span style=\"font-weight: 400;\">- the recipe calls for <\/span>boneless, skinless thigh meat, but you can also use chicken breast for a leaner alternative. Other meat options include diced pork, thinly sliced beef, liver, kikiam, and hamonado or lap cheong sausages.<\/li>\n\n\n\n<li><b>Fish balls<\/b><span style=\"font-weight: 400;\">- are popular in the Philippines and other parts of Southeast Asia. They are round in shape, most often made from cuttlefish or pollock. <\/span>You can also use shrimp or squid balls.<\/li>\n\n\n\n<li><strong>Shrimp<\/strong>- buy fresh, shell-on shrimp and peel them yourself! Frozen, peeled variety may be convenient to use, but tends to be rubbery and lack the sweet taste when cooked.<\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">V<\/span><b>egetables<\/b><span style=\"font-weight: 400;\">- I used Napa cabbage and carrots in this recipe. Feel free to substitute or add green beans, snow peas, celery, cabbage, green onions, or any other vegetables you have available.<\/span><\/li>\n\n\n\n<li><strong>Kecap Manis\u00a0<\/strong>- word\u00a0<em>manis<\/em>\u00a0means \u201csweet\u201d in Malay\/Indonesian, so it is often referred to as \u201csweet soy sauce.\u201d It has a dark color, syrupy consistency, and a molasses-like flavor due to the generous addition of palm sugar.\u00a0It's also flavored with garlic, and star anise truly adds dimension to our Miki bihon. <\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1600\" data-pin-description=\"Level up your pancit guisado! Combine \u00bc cup soy sauce and \u215b cup brown sugar in a saucepan. This is a quick process as you don't want the noodles to turn mushy.<\/li>\n\n\n\n<li>I also like to parboil the bihon in broth instead of soaking in warm water to soften. This simple trick of submerging and BRIEFLY cooking the noodles in stock adds more depth of flavor. Again this is a very quick step and is only to loosen and slightly soften the strands as the noodles will finish cooking during the stir-fry process.<\/li>\n\n\n\n<li>For fast and even cooking, cut the meat and vegetables in uniform and bite sizes.<\/li>\n\n\n\n<li>A wok is best for stir-frying but a wide skillet with high sides will work as well.<\/li>\n\n\n\n<li>To keep the noodles intact and lessen breakage, use tongs to toss the ingredients together.<\/li>\n<\/ul>\n\n\n<div id=\"callout-block_5e182a9fb3bd17398b4de25db014332c\" class=\"oc-gutenberg-block oc-recipe-tip-block callout__default\">\n\n\t<span class=\"callout--icon__default\"><span class=\"block-icon-tip\"><\/span><\/span>\n\n\t<div class=\"callout--content__default\">\n\n\t\t\n\t\t\t<h2 class=\"callout--title__default\">\n\n\t\t\t\tQuick tip\n\t\t\t<\/h2>\n\n\t\t\n\t\t\n\t\t\t<div class=\"callout--text__default\">\n\n\t\t\t\t<p>To keep the noodles intact and lessen breakage, use tongs to toss the ingredients together.<\/p>\n\n\t\t\t<\/div>\n\n\t\t\n\t<\/div>\n\n<\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-serving-suggestions\"><b>Serving suggestions<\/b><\/h2>\n\n\n\n<ul class=\"wp-block-list is-layout-flow wp-block-list-is-layout-flow\">\n<li>Miki Bihon is delicious as both a midday snack and a main dish. Serve on its own or with <a href=\"https:\/\/www.kawalingpinoy.com\/pandesal\/\">pandesal<\/a> or <a href=\"https:\/\/www.kawalingpinoy.com\/puto\/\">puto<\/a> on the side.<\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Filipino stir-fried noodle dishes are often enjoyed with a spritz of freshly squeezed calamansi (or citrus, such as lime or lemon) juice to brighten the flavors.<\/span><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-store-leftovers\">How to store leftovers<\/h2>\n\n\n\n<ul class=\"wp-block-list is-layout-flow wp-block-list-is-layout-flow\">\n<li><span style=\"font-weight: 400;\">To store leftovers, allow them to cool completely and transfer to a container with a tight-fitting lid. Refrigerate for up to <\/span>3 days. Unfortunately, this dish does not freeze well, as the noodles turn mushy when frozen and thawed.<\/li>\n\n\n\n<li><span style=\"font-weight: 400;\">Reheat in the microwave at 1- to 2-minute intervals,
