They're one of the make-ahead meals<span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\">, like\u00a0<a href=\"https:\/\/www.kawalingpinoy.com\/lumpia-shanghai\/\" target=\"_blank\">lumpiang shanghai,<\/a>\u00a0that I usually stock up on\u00a0<\/span>for busy weeknight dinners, midday snacks, or impromptu parties.<\/p>\n\n\n\n<p>I like to prep and steam a few dozen each week, then freeze them in airtight containers. On days when I am too busy to cook or want a quick dim sum fix, I pop a few pieces in the microwave for a few seconds or steam them for a few minutes to warm up.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredient notes<\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1600\" data-pin-description=\"Shumai are easy to make and delicious as an appetizer, snack, or light meal. You can swap the pork with ground chicken or the shrimp with crab meat or squid for variety. You can also omit the seafood, if you prefer, and use all meat.<\/li>\n\n\n\n<li>&nbsp;<strong>Vegetables<\/strong>- I use chopped shiitake mushrooms, water chestnuts, and green onions for extra flavor and texture. You can include finely shredded napa cabbage.<\/li>\n\n\n\n<li><strong>Ginger<\/strong>- grate the fresh ginger and press to extract the juice; this way, you reap the flavor without any bits to bite into.<\/li>\n\n\n\n<li><strong>Cornstarch<\/strong>- serves as a binder and tenderizer, keeping the pork moist and juicy.<\/li>\n\n\n\n<li><strong>Seasonings<\/strong>- soy sauce, sesame oil, Chinese cooking wine, salt and pepper, and Maggi chicken cube to boost flavor.<\/li>\n\n\n\n<li><strong>Shumai wrappers<\/strong>- look for packages labeled \"shu mai wrappers\" or sui mai skins, which are thin, round, and made specifically for this type of dumplings. If unavailable, wonton wrappers are an adequate substitute. Use round wrappers for a more traditional look. If you have square ones, use the mouth of a drinking glass as a stencil and cut the wrappers into circles.<\/li>\n\n\n\n<li><strong>Garnish<\/strong>- top the dumplings with green peas and diced carrots for color contrast. Repeat with the remaining mixture and the wrapper.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-steam\">How to steam<\/h2>\n\n\n\n<ul class=\"wp-block-list is-layout-flow wp-block-list-is-layout-flow\">\n<li>Place in a lined parchment paper\/foil pan. Chill\/refrigerate the siomai for 15 to 20 minutes, or until firm, before steaming to keep the wrappers intact.<\/li>\n\n\n\n<li>Boil water in the steamer pot and brush the steamer basket with oil to prevent sticking. You can also lightly grease with cooking spray prevent the siomai from sticking.<\/p>\n\n\t\t\t<\/div>\n\n\t\t\n\t<\/div>\n\n<\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-store\">How to Store<\/h2>\n\n\n\n<ul class=\"wp-block-list is-layout-flow wp-block-list-is-layout-flow\">\n<li>Although you can freeze the shumai uncooked, I prefer to store them already steamed, so they're ready to serve after a quick reheating in the microwave or in the steamer.<\/li>\n\n\n\n<li>Arrange the steamed dumplings in a single layer, about an inch apart, on a baking sheet, and freeze until solid, then transfer them to airtight containers so they don't stick together.
