Since one of them has worked abroad as a housemaid in the United States and learned how to make apple pie, they wanted to offer this type of pastry in their bakery. <\/p>\n\n\n\n<p>But due to a scant supply of apples in the country, they decided to take advantage of what is most abundant in their area: coconuts.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1600\" data-pin-description=\"This Filipino Coconut Pie is the ultimate tropical treat. Choose young coconuts that have a generous amount of meat yet but are still very tender. <\/li>\n\n\n\n<li>Carefully remove the meat using a spoon instead of a shredder for whole and chunky pieces instead of thin strips. <\/li>\n\n\n\n<li>For a smooth filling, cook at a gentle simmer and do not boil lest the cream curdles or separates.<\/li>\n\n\n\n<li>Let the filling cool completely before using as the escaping steam might tear the dough apart.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1600\" data-pin-description=\"Buko Pie is the ultimate baked treat! Adding acid interferes with gluten formation, resulting in a more tender crust.<\/li>\n\n\n\n<li>Use VERY cold ingredients for buttery, flaky crust. You can chill the lard and flour for a few minutes to help maintain cool temperatures.<\/li>\n\n\n\n<li>For a tender crust, add ice-cold water sparingly and use just enough amount for the dough to hold together. <\/li>\n<\/ul>\n\n\n<div id=\"callout-block_db03538167995043ef794df847578d9e\" class=\"oc-gutenberg-block oc-recipe-tip-block callout__default\">\n\n\t<span class=\"callout--icon__default\"><span class=\"block-icon-tip\"><\/span><\/span>\n\n\t<div class=\"callout--content__default\">\n\n\t\t\n\t\t\t<h2 class=\"callout--title__default\">\n\n\t\t\t\tLard substitution\n\t\t\t<\/h2>\n\n\t\t\n\t\t\n\t\t\t<div class=\"callout--text__default\">\n\n\t\t\t\t<p><!-- wp:paragraph --><\/p>\n<p>The pie pastry uses lard, but you can substitute unsalted butter or vegetable shortening (Crisco) if you prefer a healthier fat.<\/p>\n<p><!-- \/wp:paragraph --> <!-- wp:list --><\/p>\n<ul><!-- wp:list-item --><\/p>\n<li>If substituting butter, use unsalted. Butter has less fat than lard, so you might have to add more to achieve the same results. You can replace every \u00bd cup of lard with \u00bd cup and 1 tablespoon of butter.<\/li>\n<p><!-- \/wp:list-item --> <!-- wp:list-item --><\/p>\n<li>If substituting vegetable shortening, use 1:1 as shortening and lard have almost the same amount of fat.<\/li>\n<p><!-- \/wp:list-item --><\/ul>\n<p><!-- \/wp:list --><\/p>\n\n\t\t\t<\/div>\n\n\t\t\n\t<\/div>\n\n<\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-assembly-and-baking\">Assembly and baking<\/h2>\n\n\n\n<ul class=\"wp-block-list is-layout-flow wp-block-list-is-layout-flow\">\n<li>Work quickly to prevent the dough from heating  up. If it's too soft to handle or it begins to stick on the working surface, chill the dough in the refrigerator for few minutes before rolling.<\/li>\n\n\n\n<li>You can make decorative crimps on the edges of the pie or use the tines of a fork to seal.<\/li>\n\n\n\n<li>Poke holes on the top crust using the tines of a fork to serve as vents for the steam during baking.<\/li>\n\n\n\n<li>Bake the pie for about 10 minutes and then brush with egg wash for a nice golden color.<\/li>\n\n\n\n<li>Remove from the oven and allow to cool before slicing for the filling to set.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1600\" data-pin-description=\"Buko Pie is the ultimate baked treat! Transfer to a resealable bag and store in the freezer for up to 4 months.<\/li>\n\n\n\n<li>Thaw at room temperature for about 1 hour and heat in a 375 F oven on the lowest rack for about 20 to 30
