You can pull it together with almost any protein and vegetables your <del datetime=\"2018-01-25T16:37:20+00:00\">heart<\/del> tummy fancies.<\/p>\n\n\n\n<p>I made this pancit lomi guisado using the chicken, shrimp, <em>lap chong<\/em> (Chinese sausage), carrots, chayote, broccoli, and cabbage I had in the fridge. Stir-fry the chicken pieces with the rest of the ingredients and use the broth in place of water.<\/li><li><strong>Fish balls, squid balls, meatballs, or kikiam<\/strong>- cut into desired pieces and lightly brown before tossing into the pancit<\/li><li><strong>Chicken or pork liver<\/strong>- cook briefly to keep from toughening<\/li><li><strong>Ground beef or ground chicken<\/strong>- lightly brown and break into chunks<\/li><li><strong>Lechon kawali<\/strong>- chop into bite-size pieces and toss in the pancit just until heated through<\/li><li><strong>Crushed chicharon<\/strong>- top pancit before serving<\/li><li><strong>Fresh or dried mushrooms<\/strong>- soak until softened if using dried and slice thinly<\/li><li><strong>Chinese celery (kinchay)<\/strong>- one of my favorite vegetables to use; I love the aroma and flavor!<\/li><li><strong>Pechay<\/strong>- use in place or in addition to the cabbage<\/li><\/ul>\n\n\n\n<p>What else do you add to pancit?
