I have quite a few pancit recipes already on the blog, but there's a lot more to explore!<\/p>\n\n\n\n<p>I came across this Pancit Langlang on Youtube when I was researching our regional varieties of pancit, and its list of ingredients caught my interest. It's not uncommon to combine different types of noodles in one pancit dish, <a href=\"https:\/\/www.kawalingpinoy.com\/miki-bihon\/\" rel=\"noopener noreferrer\">miki bihon<\/a> being a prime example, but the addition of ground pork was a new concept to me. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1500\" height=\"1830\" data-pin-description=\"Pancit Langlang is a delicious combination of fresh miki and cellophane noodles with ground pork, flaked chicken, and tender-crisp vegetables. Who can resist something so <em>old<\/em> and so rich in history, right?<\/p>\n\n\n\n<p>Rizal so loved this pancit he often asked his brother, Paciano, to send him the noodles during his stay in Europe. Even in a passage in his novel <a href=\"https:\/\/en.wikipedia.org\/wiki\/El_filibusterismo\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">El Filibusterismo<\/a>, he wrote about his favorite comfort food!<\/p>\n\n\n\n<p><em>Mga ginoo; ang pansit-langlang ay siyang sopas na pinakamabuti! \u2014ang sigaw ni Makaraig; \u2014gaya nang makikita ninyo, Sandoval, ang halo ay kabuti, hipon, tiniping itlog, sutanghon, manok, at hindi ko na maalaman kung ano pa. Bilang pamago ay ihandog natin ang mga buto kay D. In my further readings, Pancit Langlang appears not a type of noodle dish but a type of noodle that is similar to our modern-day flat, thin&nbsp;miki.<\/p>\n\n\n\n<p>Various regions in the Philippines have some form or another of Pancit Langlang. Iloilo has a noodle soup version that uses Pancit Molo. Feel free to add or swap Chinese-style sausage, <em>kinchay<\/em> (Chinese celery), <em>tenga ng daga<\/em> (black fungus), and <em>hibi<\/em> (dried baby shrimp).<\/li>\n\n\n\n<li>You can also top the cooked noodles with toasted garlic, green onions, and crushed chicharon or chopped <em>lechon kawali<\/em>.<\/li>\n<\/ul>\n\n\n<div id=\"callout-block_61646196cb3fb8de582bd440cc457117\" class=\"oc-gutenberg-block oc-recipe-tip-block callout__default\">\n\n\t<span class=\"callout--icon__default\"><span class=\"block-icon-tip\"><\/span><\/span>\n\n\t<div class=\"callout--content__default\">\n\n\t\t\n\t\t\t<h2 class=\"callout--title__default\">\n\n\t\t\t\tCooking tips\n\t\t\t<\/h2>\n\n\t\t\n\t\t\n\t\t\t<div class=\"callout--text__default\">\n\n\t\t\t\t<ul>\n<li>Poach the chicken instead of boiling. This low heat, moist cooking method helps food retain moisture resulting in juicy, flavorful chicken pieces. It also makes a tasty addition to parties or special occasions.<\/li>\n\n\n\n<li>Enjoy with puto, pandesal, or steamed rice.<\/li>\n\n\n\n<li>Transfer leftovers to a container with a lid and refrigerate for up to 3 days.
