It took a while to make it happen, but I'm happy to report I now have one that's 400-plus videos strong! Over the past five years, I've invested heavily in videos, and we've grown quite a <a href=\"https:\/\/www.kawalingpinoy.com\/videos\/\">video library<\/a>. My goal, hopefully, is to have a corresponding one for every recipe on Kawaling Pinoy.<\/p>\n\n\n\n<p>I am visual, and I think visual cues make learning easier. One good example is this daing na bangus post. I could fully describe how to gut, butterfly, and debone the fish, but the instructional video explains the process better than all the words I could have used.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-is-daing\">What is daing<\/h2>\n\n\n\n<p>Daing is a Filipino style of food preparation where meat, fish, or seafood are split open or sliced thinly, salted or marinated in vinegar, and sun-dried.  It was traditionally a method to preserve and prolong the life of food, with salt inhibiting the growth of bacteria and the sun's heat drawing out excess moisture. <\/p>\n\n\n\n<p>In this bangus version, milkfish is gutted, split open, marinated overnight in spiced vinegar, and pan-fried until crisp and golden.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredient notes<\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1600\" data-pin-description=\"Daing na Bangus is marinated in vinegar and spices and fried to golden perfection. Has a flaky white flesh that's mildly flavored, delicately textured, and generously studded with bones. <\/li>\n\n\n\n<li><b>Vinegar- <\/b>Tenderizes the fish<b>,<\/b> provides a tangy taste, and acts as a preservative with salt to prolong the fish's life. I use coconut or palm vinegar in this recipe, but you can also use distilled white vinegar or apple cider vinegar, albeit with some minor changes in taste.<\/li>\n\n\n\n<li><strong>Spices and seasonings<\/strong>- garlic, peppercorns, and salt enhance flavor. Watch the video below for a visual guide on removing the bones.<\/li>\n\n\n\n<li><strong>Make the marinade- <\/strong>Combine the ingredients and stir until the salt dissolves. Place in a flat, shallow dish that will easily fit the fish.<\/li>\n\n\n\n<li><strong>Marinade the fish<\/strong>- Do not marinate the bangus for too long, as the acids in the marinade will break down the proteins and make the flesh mushy. I find overnight enough to achieve good flavor.<\/li>\n\n\n\n<li><strong>Fry the marinated fish<\/strong>- Drain the fish well to prevent splatters. Use the right kind and enough oil for the best results. It's also delicious for lunch or dinner with steamed rice and vegetable side dishes such as <a href=\"https:\/\/www.kawalingpinoy.com\/ginataang-gulay\/\">ginataang gulay<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to store<\/h2>\n\n\n\n<ul class=\"wp-block-list is-layout-flow wp-block-list-is-layout-flow\">\n<li><strong>Cooked<\/strong>- Transfer the fried bangus to a container with a tight-fitting lid and refrigerate for up to 3 days. <\/li>\n\n\n\n<li><strong>Uncooked<\/strong>- To store for later use, drain the uncooked bangus from the marinade and freeze them in Whisk together until salt is dissolved. <\/span><\/div><\/li><li id=\"wprm-recipe-32864-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Add fish, making sure they are fully submerged in the solution. Marinate in the refrigerator for at least 4 hours or overnight for best results.<\/span><\/div><\/li><li id=\"wprm-recipe-32864-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Drain fish from the vinegar and wipe down any stray aromatics. Discard marinade.<\/div><\/li><li id=\"wprm-recipe-32864-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">In a wide pan over medium heat, heat about 1-inch deep of oil. If using larger fish, cut the daing in half.<\/li>\n<li>Although daing na bangus can be scaled or unscaled, I prefer to keep the scales on to prevent the fish from falling apart during frying.<\/li>\n<li>Do not marinate the fish for too long, as the acids in the marinade will break down the proteins and make the flesh mushy.
